Has ST5 been put in the bin, cant find anything about it anymore.

For the moment new development on ST5 family has been stopped. You can find info and material available on Technical Literature and Support Files section looking for ST5 device.
Do you need something in particular?

Ok, but is it safe to base new designs on st5, or should I look elsewhere.

It depends. For standard applications ST recommends ST7, but for dedicated purpose (for istance fuzzy logic) ST5 can be used too.

So they are not near "End Of Life".
I would then be able to do design around them which may hit the market in a year or so, and still be safe?
